Ingredients

  • 12 diced bacon strips
  • 12 lightly beaten eggs
  • Pepper and salt to taste
  • 10 flour tortillas
  • 1-1/2 cups of shredded cheddar cheese
  • 1/2 cup green onions, thinly sliced

Directions

-Cook the bacon until crisp in a large skillet then remove to paper towels. Drain, keeping back 1 to 2 tablespoon drippings. Add eggs, pepper and salt to the drippings. Cook while stirring over medium heating until the eggs are fully set.

-Spoon about ¼ cup of the mixture at the center of each of the tortillas. Sprinkle with onions, cheese and reserved bacon. Fold the sides and bottom of each tortilla over the filling. Wrap each in aluminum foil and waxed paper. Freeze for up to a month.

-Using the frozen burritos: Remove the foil the place the burritos in a microwave while still wrapped with the waxed paper. Use about 60% power for 1-1/2 minutes to heat it through. Let it stand for 20 minutes then serve.

Andouille Egg Burrito Recipes

Ingredients

  • ¼ cup of chopped onions
  • A tablespoon of butter
  • 1/2 pound of sliced Andouille sausage links
  • A tablespoon of chopped green chillies
  • 1 seeded and chopped jalapeno pepper
  • 1/8 tablespoon table salt
  • 1/8 teaspoon of pepper
  • Dash cayenne pepper
  • 6 warmed flour tortillas
  • 1/2 cup of shredded pepper jack cheese
  • Taco source (optional)

Directions

-In medium heat, cook the onion and butter until tender. Add the chillies, sausage and jalapeno; cook for about 4-5 minutes until all is heated through. Add salt, eggs, cayenne and pepper; cook until the eggs are fully set.

-Spoon fill the center of each tortilla. Sprinkle each with 2 tablespoons of cheese. Fold ends and sides over the filling and roll up. If desired, serve with taco sauce.

Breakfast Burritos with Sausage and Cheese

Ingredients

  • 5 eggs
  • ¼ pound pork sausage
  • 1/3 cup tomato, chopped
  • ¼ cup of chopped onion
  • 2 tablespoons green chillies, chopped
  • ¼ tablespoon of pepper
  • 5 slices of cheese
  • 5 warmed flour tortillas
  • 1 cup of chunky salsa
  • 1 cup of sour cream

Directions

-Cook the sausage over medium heat until it is no longer pink in a skillet; drain

-Whisk the eggs, onion, tomato, pepper and chillies in a large bowl. Add the mixture to the skillet; cook while stirring until fully set.

-Put the cheese slice one each tortilla. Spoon fill the center of each tortilla. Top with sour cream and salsa. Fold ends and sides over each filling and roll up.

Green Chilli Breakfast Burritos

Ingredients

  • 3 egg whites
  • 1 seeded and minced jalapeno pepper
  • Dash cayenne pepper
  • 4 turkey sausage links with casings removed
  • 1 cup of reduced fat cheese
  • 4 ounces green chillies, chopped and drained
  • 6 warmed whole wheat tortillas
  • 6 tablespoons of salsa

Directions

-Whisk the eggs, cayenne and jalapeno in a small bowl. Set them aside.

-Into a large skillet, crumble the sausage: cook under medium heat until the pink color is no longer there. Push the sausage to the sides of the pan. Pour the egg mixture that was set aside at the centre of the pan. Cook while stirring until fully set. Sprinkle with chillies and cheese. Remove from the heat source; covet the set and let all the cheese melt.

-Place 1/3 cup of the mixture on the centre of each tortilla. Fold ends and sides over filling and roll up. Top with salsa.
